We deliberately serve honest Indonesian home cooking โ not stiff hotel food. The usual spread:

What about vegetarians, vegans, and allergies?
Easily handled โ we get this question weekly from guests around the world. Tell us at least 24 hours before departure (in the booking notes or via WhatsApp) and our kitchen prepares a separate version: plant-based protein for vegetarians and vegans, seafood-free dishes for fish and shellfish allergies, or nut-free plates. Cookware for allergy orders is kept separate. Children who can't handle spice are automatically safe โ sambal is always served on the side, never mixed in.
Where do the ingredients come from?
Almost everything is sourced within Labuan Bajo and its surroundings. Fish is bought from the local landing before dawn; vegetables and fruit come from the morning market supplied by Manggarai highland farmers; spice pastes are ground by our own kitchen team. This isn't just about freshness โ every departing trip circulates income to local fishermen, farmers, and market vendors. Behind the galley: how lunch reaches the middle of the sea
The lunch operation starts long before guests wake. At 4:00 AM our kitchen team is at the fish landing choosing the night's catch โ clear eyes, red gills, no compromises. By five, the kitchen is steaming: spices frying, rice cooked in precise quantities from the day's passenger manifest, two sambals ground. Before six, everything is sealed into food-grade containers and coolers, loaded aboard with ice and water gallons. At sea, the crew doubles as service staff โ warming, arranging the buffet, making sure nobody eats standing up. Our food-safety rules are non-negotiable: cold chain maintained until serving, morning-cooked-lunch-served (never overnight food), sealed drinking water, gloved hands at the buffet, and allergy orders packed separately with name labels so nothing gets swapped on a busy deck.
Tips for enjoying lunch on board
- Don't overeat before the next swim โ leave 30โ45 minutes before returning to the water; our route already builds in that gap.
- Prone to seasickness? Eat a moderate portion and skip very acidic drinks; eating actually helps โ an empty stomach makes nausea worse.
